Chicken, Sun Blushed Tomato & Basil with Mozzarella & Pesto Mayonnaise

Want to bite into a dishy Italian then look no further. This recipe is the perfect summer classic, packed full of Mediterranean flavours.

Ingredients

The Mediterranean
2 Lean & Greens Chicken, Sun Blushed Tomato, Cannellini Beans & Basil Patties
2 Heaped tbsp. of Mayonnaise
1 tbsp. Good Quality Pesto
2 Plum Tomatoes Thinly Sliced
2 Brioche Buns
1 Ball of Buffalo Mozzarella Sliced
Handful of Crunchy Mixed Leaf Lettuce

Method

Step 1

Firstly, mix the mayonnaise and the pesto together and sit aside

Sear the Patties on both side until you have a golden caramelised colour and place in oven for 5 - 8 minutes until cooked

To serve

Lightly toast the brioche bun in the oven or on a grill pan.

Spread the mayonnaise on the bottom and followed by the patty, mozzarella, plum tomato and crisp lead lettuce. Enjoy with wedges or triple cooked chips.
